Potato Gratin

Serves 8

Ingredients
2 large Russet potatoes (1.5 lb.)
2/3 cup skim milk
1/3 cup evaporated skim milk
2 Tbsp. flour
1/8 tsp. grated nutmeg
½ tsp. fresh thyme leaves, or ¼ t. dried
¾ tsp. salt
Freshly ground pepper to taste
½ cup reduced fat cheddar cheese

Preparation
Preheat the oven to 350ºF. Spray an 8-inch square baking dish with cooking spray.

Peel the potatoes and slice them as thinly as possible. Arrange a layer of them to cover the bottom of the baking dish.

In a small bowl, mix the milk and evaporated milk with the flour, nutmeg and thyme. Mix in the salt and freshly ground pepper to taste. Pour a quarter of the milk mixture over the potatoes. Sprinkle on a quarter of the cheese. Repeat these layers, ending with the cheese.

Bake, covered, until the potatoes are tender, about 30-45 minutes. Uncover and place under the broiler for a couple of minutes until the cheese on top browns.
