Marinated Pork Tenderloin

Serves 4

Steamed brown rice and snow peas go well with this Asian-flavored pork.

Marinade
1 small onion, grated or minced
¼ cup low-salt soy sauce
1 tablespoon toasted sesame oil
2 teaspoons grated peeled gingerroot, or
¾ teaspoon ground ginger
2 medium garlic cloves, crushed
1 teaspoon grated lemon zest

1 pound pork tenderloin, all visible fat and silver skin discarded
¼ cup dry white wine (regular or nonalcoholic)
¼ cup honey
1 tablespoon dark brown sugar

Preparation
Preheat the oven to 375ºF.

In a large, resealable plastic bag, combine the marinade ingredients.

Add the pork to the marinade. Seal the bag and turn to coat. Refrigerate for about 8 hours, turning occasionally.

Remove the pork from the marinade; drain well, discarding the marinade. Put the pork in a shallow nonstick baking pan.

In a small bowl, whisk together the remaining ingredients. Pour over the pork, turning to coat all sides.

Bake for 25 to 30 minutes, or until the internal temperature reaches 170ºF. Remove from the oven and let rest for 5 minutes. Slice and serve.

Cook’s Tip on Toasted Sesame Oil
Widely used in Asian and Indian cuisines, this polyunsaturated oil is also called Asian sesame oil and fragrant toasted sesame oil. Toasted sesame oil is darker and stronger in flavor than “plain” sesame oil.
