Sweet Potato Pie

Serves 16 (2 pies)

Ingredients
Crust

2 ready-made graham cracker crumb crusts, 6 oz. each.

Filling

4 medium sweet potatoes
2 eggs
1 cup fat-free milk
½ cup packed dark brown sugar
¼ cup maple syrup
2 tsp. grated orange zest
2 tsp. cinnamon
½ tsp. grated nutmeg
¼ tsp. cloves
1/8 tsp. salt

Preparation
Preheat oven to 400ºF. Bake sweet potatoes until soft, about one hour. When potatoes are cool enough to handle, peel and mash with fork. Measure 3 cups. Set what remains aside for another use. (This can be done a day ahead.) Reduce oven to 350º.

For the filling, combine sweet potatoes with eggs, milk, sugar, maple syrup, orange zest, cinnamon, nutmeg, cloves and salt in blender or food processor. Puree until smooth. Pour filling into prepared crusts. Bake pie in center of oven for 45-60 minutes, until all but center of pie is set; center will still be slightly soft. If necessary, cover edges of pie with aluminum foil during last 15 minutes to prevent burning.

Cool pies completely on a rack. This pie tastes best the next day, when the flavors have had time to meld. It keeps 2 to 3 days, covered and stored in the refrigerator.
